Strawberries and Cream Cheese Cupcake – What more is there to say?

I’m getting my July cupcake in under the wire! I literally just whipped these up. (It’s a good thing they came out right the first time!)  They are a great summer cupcake, nice and light. The cupcake part taste like sugar cookies. If you are allergic to strawberries substitute your favorite berry.

I hope August is a little less …everything. I’ve unpacked most everything and seem to have somehow misplaced a few things like my hand mixer. My frosting is a little lumpy as a result, but I assure you it tastes delicious. I also overfilled my cupcake pans. This makes six. I’ll let you decide how many it serves. 😉

Strawberries and Cream Cheese Cupcakes
makes 6

  • 1/3 cup unsalted butter, room temperature
  • 1/2 cups plus 3 tablespoons granulated sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1/2 cup buttermilk
  • 1 cup all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

strawberry filling

  • 4 oz. cream cheese, room temperature
  • 1/4 cup chopped strawberries
  • 1/8 cup powdered sugar
  • 1/8 teaspoon lemon juice – really just a drop

Preheat oven to 350°F. Line cupcake pan with paper liners. Beat butter and sugar together until fluffy. Beat in egg and vanilla. Add buttermilk, flour, baking powder, and salt. Mix until smooth. Fill muffin cups 3/4’s full. Beat cream cheese, strawberries, 1/4 cup sugar, and lemon juice until smooth. Drop a tablespoon of filling into each cupcake. Bake 20-25 minutes or until cake is just browning on the edge and a toothpick inserted in the center comes out clean. Cool completely on a wire rack. Frost. Eat right away or store in the fridge.

Whipped Strawberry Frosting

  • 1 cup whipping cream
  • 4 oz. cream cheese, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 4-5 strawberries, smashed or pureed

Whip whipping cream until it reaches soft peaks. Set aside. Beat butter and cream cheese until fluffy. Beat in the powdered sugar and vanilla. Beat in strawberry puree. Gently fold in the whipped cream.

  20. This looks WICKED Holly… How could you do this to me? I just preached about a healthy diet on my last blog post and here you are posting is DELICIOUS looking cupcake… OHHHHHHH. I SOOOOOO want one. LOL.

    Perhaps I can alter the recipe with stevia instead of sugar and a different flour? It surely won’t taste the same…. lol.
