Peanut Butter Cupcakes for the Kid in All of Us

These really did make me feel like a kid again. They were just plain fun.

Three words describe this cupcake: moist, smooth, and peanutbuttery. They really don’t need frosting. But if you wanted to add a little chocolate frosting, I wouldn’t stop you.

Are you a Peanut Butter Cupcake?

Peanut Butter Cupcakes
makes 8

2/3 cup packed brown sugar
2 tablespoons and 2 teaspoons solid vegetable shortening
1/3 cup peanut butter, smooth or chunky
1 egg
1/2 cup milk
1/4 teaspoon vanilla
3/4 cup plus 1 tablespoon and 1 teaspoon all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon baking powder
good pinch of salt

Preheat the oven to 350°F. Line cupcake pan with paper liners. Cream brown sugar with shortening and peanut butter until fluffy. Beat in the egg. Add the remaining ingredients and mix until smooth. Fill muffin cups 3/4’s full. Bake 20-25 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack. Frost.

Chocolate Fudge Frosting
If the frosting is too sweet, add more cocoa powder, by the tablespoon, until you are happy

1/4 cup butter
1-1/2 (1 ounce) squares unsweetened chocolate
1/2 pound powdered sugar
1/4 cup unsweetened cocoa powder
1/4 teaspoon vanilla
1/4 cup and 2 tablespoons milk

Melt chocolate and butter in the microwave or in the top of a double boiler. In a large bowl, combine powdered sugar, cocoa powder, vanilla, and 1/4 cup of the milk. Blend in the melted chocolate mixture. Let stand until spreadable. Frosting thickens as it cools.

  4. I downloaded the app “my fitness pal” yesterday and got all signed up. This move facilitated by the fact that Healthy Utah assessed me last week, and I need to lose 80-pounds. I think that these cupcakes may have to wait on the back burner. But they sure look delicious.

  6. we don’t have peanut butter here, but I do love to put peanuts in a lot of my cakes! And plus peanuts are so much cheaper than walnuts, hazelnuts and other nuts 🙂

    1. Gads Dez! No peanut butter either? You can grind up peanuts add a little oil, honey, and salt until you like the taste and use that.

      1. no need to oil it or salt it 🙂 I just grind the peanuts and use it in my cakes like that 🙂
