Pumpkin Cupcakes for May?

Why, yes. The “sign” of the pumpkin cupcake is warm and inviting just like those of you born this time of year.

These are the moistest cupcakes in the series so far! The spices are spot on. I will definitely be making these again once autumn rolls around.

Pumpkin Cupcakes with Maple Cream Cheese Frosting
makes: 8-9 cupcakes

4 tablespoons unsalted butter, room temperature
1/2 cup packed light brown sugar
5 tablespoons plus 1 teaspoon granulated sugar
1 egg
1 cup cake flour
3/4 cup canned pumpkin
1/4 cup milk
1 teaspoon baking powder
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
pinch of ground cloves

Preheat the oven to 350°F. Line cupcake pan with paper liners. Cream butter with sugars until fluffy. Beat in the egg. Mix in the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, salt, milk, and vanilla. Beat in the pumpkin until smooth. Fill muffin cups 3/4’s full. Bake 20-25 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack. Frost.

Maple Cream Cheese Frosting
8 oz. package cream cheese, room temperature
4 tablespoons butter, room temperature
1 cup sifted powdered sugar
1/2 teaspoon vanilla
3 tablespoons maple syrup

Blend cream cheese and butter. Beat in vanilla and maple syrup, then gradually add in the powdered sugar.
